Are you Reddy? (Vegan)

Bowl Details: This West African inspired bowl is inspired by the Ghanaian dish Red Red. This delicious soup of Black Eye Beans, carrots, plantain and spinach in a tomato coconut base is the perfect meal for an Autumnal day.

Bowl Story: Beans and pulses feature heavily across West African cuisine and this super moreish bowl is one of my favourites as it is perfect balance of mildly spicy, sweet and the flavour of the coconut brings everything together beautifully.

It's Jollof Time(Chicken)

Bowl Details: West African inspired rice cooked in a spicy tomato & red pepper sauce, accompanied with plantain, avocado and a choice of garlic & chilli chicken.

Bowl Story: Jollof - that West African favourite has come to Bowled Over! We're so excited to present the It's Jollof Time bowl as part of our Bowdly Black series. We have made it easy to prepare this delicious meal to bring the West African experience to your home.

No We Ain't Jerkin (Salmon)

Bowl Details: Jerk Salmon on a red cabbage, kidney bean and mango salad.

Bowl Story: This bold bowl is a delicious mix of fiery Jerk Salmon and a sweet but filling salad. Only proceed if you're ready.

John's bowl (Vegan)

Bowl Details: Flaked smoked mackerel, lentils, sweet potato, avocado and salad leaves in a smoky garlic dressing.

Bowl Story: My brother John loves fish, and this salad came to be when he visited me once and I wanted something that was fairly healthy but filling to satisfy all 6'3" of him! He loved it and ever since has kept asking for it. The perfect blend of salty, from the flaked mackerel and sweet from the sweet potatoes along with the freshness from the crisp salad leaves and avocado, this super quick bowl is a perfect summer meal!

Rio Carnival Bowl (Vegan)

Bowl details: Black bean & Plantain Feijoada, Kale, Avocado & Red Pepper Salad and Brown Short Grain Rice

Bowl Story: Inspired by Brazil's national dish Feijoada (pronounced "fay-zhu-wada") and the colours and vibrancy of the capital's yearly carnival.

Traditionally, Feijoada is made with a selection of beef and pork cuts. However, I adapted the dish and created this recipe for two clients of mine, when I sought to make it lighter, but still retain the flavour punch. Traditionally topped with Farofa (dried Cassava, known as Gari in West Africa), the inclusion of Plantain in this bowl is a subtle nod to the African influence on the country.
